Touchdown Texas Chili

Days away from the Big Game! I can imagine all the males rooting for the big win and all the females rooting for the soon-to-be free TV! Goodness, I’ve been cooped up too long. So, to celebrate, we’re planning to go out with a big bang with this smoky, meaty, no beans chili! My caveman and his father made a special request for chili, providing the little chef with a stash of her favorite beer for game day, so of course I’m obliging. This chili packs some spicy smoky chipotles in adobo sauce (my favorite Spanish Goya brand) and a couple of squares of dark chocolate (a special nod to the Mexican mole). So go dust off the slow cooker, get as much meat as possible, and be prepared to let this baby sit overnight to marinate all the flavors. Absolute touchdown taste the next day! Let’s Go Pats!

Prep Time: 30-45 min
Cooking Time: Slow Cooker on Low for 5-6 hrs
 
Ingredients: 
1lb ground meat
1lb spicy italian sausage (removed from casing)
1lb stew meat (I ground these since the men enjoy smaller meaty pieces- can cut into smaller cubes)
2 onion- chopped
6-8 Garlic cloves- minced
1 Green pepper- chopped 
1 small can tomato paste
24oz Fire Roasted Tomatoes with juice
1 tbsp Brown Sugar
2 tbsp Chili powder
3-4 Chipotles in adobo (seeds removed and chopped)
2 tsp oregano
1 tbsp cumin
2 oz semisweet baking chocolate- chopped
1 beer OR 5 Beef bouillon cubes with 1 cup water

Prep

-Combine all the meat and begin browning in a pan. Salt and pepper to taste and add tomato paste. Place all the meat into the slow cooker, turned on low.

 

 

 

 

 

 

 

 

 

 

 

 

 

 

-Sauté the onions pepper, and garlic in the same pan over medium heat. Add water and sauté until the onion is soft and translucent. Add the chopped chipotles and a splash of the adobo sauce. Transfer veggies to the slow cooker.

 

 

 

 

 

 

 

-Add the remaining ingredients (except the chocolate) to the slow cooker. Wait 15-20 minutes until the meat starts cooking and add the chopped chocolate. Mix well, cover, and come back in 5-6 hours.

 

 

 

 

 

 

 

 

 

 

 

 

 

-The next morning, turn slow cooker to low, taste and season with salt and pepper.  Let cook for another hour then serve. Freezes wonderfully!
